Hi Josh,
From your Desktop, right click and go to New > Shortcut
Type:
"c:\Program Files (x86)\PlayIt Recorder\PlayItRecorder.exe" /Multiple /CustomApplicationDataPath="C:\ProgramData\PlayIt Recorder (7 days)"
Click Next.
Type:
PlayIt Recorder (7 days)
Click Finish
A shortcut will be created with a new blank configuration which you can use to set up your 7-day configuration.
Repeat this for 42 days.

How can I run 2 instances of PlayIt Recorder at the same time so that:
1) Goes to one folder for 42 days as my 'proof' recording for 42 days
2) Goes to another folder as my FTP listen again recording for 7 days.
I know it can be done, I just don't understand what to do to the shortcuts to make it work.
